I’ve compiled 4 healthy and delicious 4th of July recipes here to help you stay on track with your healthy living + weight loss goals this weekend! Nutritious food doesn’t have to be boring. Pick a recipe below or use all 4 for a complete party menu!

Air fryer chicken wings

(For the meat lovers like my husband)

Chicken wings are such a fantastic party food, especially for the 4th of July! The best thing about these is how little time and attention they require to prepare (which means you have more time to spend socializing with your people)!

The sauce you choose for the wings will ultimately determine how healthy these are. I love that there is no added oil necessary, though, to cook these to crispy perfection! As a vegetarian, I obviously can’t vouch for these myself (though I can tell you that my husband and kids totally love them!), but I can recommend this with full confidence because Pip and Ebby is the queen of dishing up deliciousness!

This salad might not look like a main dish to you, but aren’t most 4th of July gatherings more “picnic style” anyway? Chickpeas, aka garbanzo beans, actually pack a super powerful punch of protein making them a staple food, and often main dish, for many vegetarians.

And can we just mention how beautiful all of these colors are together? FoodieCrush has made it so simple for us with this recipe that requires minimal prep time and kitchen skills! Easily toss this together in no time for your 4th of July festivities.

*You can also modify this to be a vegan-friendly option by omitting the feta (though, I’m of the opinion that everything tastes better with cheese)!

Let’s be honest, corn-on-the-cob is kind of a no-brainer for the 4th of July, right? But I love this unique option of cutting the corn off the cob and putting it into a salad. This allows us to get even more nutritious and delicious veggies in for the day!

If I’m trying to stay on track with healthy eating through a holiday or a party or any kind of event, I want my healthy foods to be extra tasty! That way I’m less tempted to opt for the junk foods that will probably be offered in abundance. A nutritious recipe that doesn’t cut any corners when it comes to flavor is exactly what Well Plated offers for us here!

I’ve lost track of the number of doctors we have I’ve lost track of the number of doctors we have seen in the last month, but it’s a lot. Patrick and our other three kids are in Turkey this week for a work trip but Mudjok and I stayed behind to seek further medical care for her. 

We are exploring every option. Her first symptoms started within a week of moving in to our apartment here, so she and I checked ourselves into a hotel yesterday and are going to stay here for the next week and see if by any chance we see improvements. Perhaps there is mold in our apartment or some other environmental factor at play. 

Today we saw the allergy specialist again and she tested for a couple different viruses + dust and mold allergies + thyroid + liver + some other things…a couple tests she told me she was going to run got lost in translation today but I told her I wanted her to test for anything she could think of, and I do believe she did that. They took a lot of blood! 

God opened a door for us tomorrow morning to see a dermatologist! This particular dermatologist is apparently very good and typically fully booked many months out. We tried to get an appointment with her earlier and were told there would be no way. Turns out there was a cancellation tomorrow and the pediatrician Mudjok saw last week was able to convince this dermatologist to get MJ into that time slot 🙌🏽

Thursday we see an immunologist at the Childrens hospital here. The ER doctor who saw MJ the first time we were there was able to squeeze us in with this specialist, who also books out 3-4 months, so we are so thankful for these open doors! 

Thank you for praying with us! Navigating a foreign healthcare system with a sick kiddo has by far been the hardest part of our transition to life here in Estonia. But we are moving ahead one day at a time and asking God for continued discernment + complete healing for our sweet girl. 🙏🏽💞

“Missionary Kid” was never a title they though “Missionary Kid” was never a title they thought would be attached to their names. But we are all full of anticipation to see how the Lord works in + through them in Estonia ♥️ #agwm
She’s technically not the baby in the family (sh She’s technically not the baby in the family (she’s 9 months older than Greatness), but MJ feels like the baby because she was the youngest child we ever parented. We were blessed with her when she was just 4.5 years old…all that same spunk she has today but packed inside the tiniest, cutest little body! 

Yesterday, Mudjok turned 10!! She had a countdown going to her double digit birthday for over a hundred and some days (she wasn’t excited or anything 😉😂)!! We couldn’t love this {not so} little girl more if we tried! She is enthusiastic about literally everything, finds the joy in every circumstance, and she’s got just enough spice to always keep us on our toes 😅 

We love you Mudjok, ten is going to be one adventurous + beautiful year for you!!!!
